Our Sunday homemade breakfast! :-) Yummy!

I love weekends!!! Waking up at...whatever o'clock...going to the kitchen, making coffee while yawning and looking through the window.
I just love it!
And of course Sunday breakfast-lunch! It's the most delicious breakfast during the week. Eggs, bacon, potatoes, pancakes. Yumm....
 I'm not going to write here how to fry bacon or eggs but I will tell you about my pancakes and potato wedges.

I will start with potatoes...
3 potatoes. peeled, cut in wedges
1 t spoon paprika
1 t spoon garlic powder
1/2 t spoon oregano
2 tbl spoons olive oil
salt, pepper

So, place your potato wedges in a bowl, add all the other ingredients, cover the bowl and shake it well, so all the oil and herbs marry together. Take a shallow baking sheet, cover it with foil and place your wedges on it. Preheat the oven to 400 degrees and bake the potatoes 20-25 minutes until golden brown.

Hmmmm...pancakes...yummers!
I love blueberry pancakes!!! So does my husband!

What you need -
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/4 teaspoons white sugar
1 egg
1 cup milk
1/2 tablespoon butter, melted
1/2 cup frozen blueberries, thawed

In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with Maple syrup, honey or blueberry jam. Enjoy your Sunday breakfast!!! :-)
