Vegan mushroom and spinach soup!

Oh my...It tastes much better than it sounds :-)

So,
2 tblsp olive oil
1 (8 oz) pkg sliced fresh mushrooms (3 cups)
½ Cup finely chopped carrot
½ Cup finely chopped onion
2 medium potatoes, peeled, cut in cubes
3 stalks celery
4 cups water or vegetable stock
1 ½ Cup spinach leaves (I used frozen spinach)
dash pepper
salt to taste

Heat oil in large pan over medium heat
Add vegetables; cook & stir about 3 minutes
Add broth, spinach, pepper, salt, mix well.
Cover it and let it simmer for about 30 min.

Yep! Easy and delish!! :-)
